Heat a splash of oil in a large pan over a medium heat. Add the leeks (2) and sausages (1 pack), half of the sage (2.5 g), and the thyme leaves (5 g) and cook for 7-10 minutes, turning occasionally, until the sausages are browned and the leeks are soft. Transfer to the slow cooker with the pumpkin (400 g).

Dissolve the stock (2 tsp) in the boiling water (150 ml) then add this to the slow cooker too. Pour in the cider (150 ml). Give everything a good stir.

Set the slow cooker to medium, then cook for 1.5 hours.

Combine the cornflour (1 tbsp) in a small bowl with 1 tbsp water. Mix to form a slurry, then stir into the slow cooker and turn the heat to high. Cook for a further 20 minutes.

When the stew is almost ready, heat a generous splash of oil in a small frying pan over a medium heat and add the remaining sage leaves (2.5 g). Cook for 2-3 minutes until crisp, then grate over the lemon zest (1).

Serve the casserole in bowls, topped with the crispy sage leaves and lemon.
