Add the Stilton (150 g) and crème fraîche (2 tbsp) to a food processor and blitz until smooth and velvety. Be careful not to overmix, as this can make the mixture go grainy. You may need a splash of water to get it moving.

Toast the sourdough (4 slices). Thinly slice the apples (2), discarding the core, and cut each slice in half so you have half-moon shapes. Toss in the lemon juice (1/2).

Spread the toasted sourdough with the whipped blue cheese, top with the sliced apples and a drizzle of honey (4 tsp). Finish with the chopped chives (5 g).
