Preheat the oven to 170°C/150°C fan/gas mark 3. Grease and line a 900g loaf tin, making sure the base is well lined. Brush the base of the tin with the melted butter (30 g) and scatter over the brown sugar (40 g). Arrange the persimmon slices (2) over the base, slightly overlapping them to create an even layer.

To make the cake, place the butter (150 g) in a saucepan over a medium heat. Melt and cook for 4-5 minutes, stirring occasionally, until golden brown and smelling nutty. Stir in the sugar (175 g) and syrup (4 tbsp) until combined, then set aside to cool for 10 minutes.

Meanwhile, whisk together the flour (250 g), ginger (2 tsp), cinnamon (1 tsp), mixed spice (1/2 tsp) and bicarbonate of soda (1 tsp) in a large bowl.

Beat the eggs (2) into the cooled butter mixture. Pour into the dry ingredients and mix until smooth.

Carefully spoon the batter over the persimmons and smooth the surface. Bake for 45-55 minutes, or until a skewer inserted into the centre comes out clean. Leave to cool in the tin for 10 minutes, then carefully run a knife around the edge and turn out onto a serving plate while still warm. Brush the cake with the cordial (1 tbsp).

Leave to cool slightly before slicing, then serve with a dollop of crème fraîche (as needed) or ice cream, if you like.
