To make the simple syrup, put the water (100 ml) and caster sugar (100 g) in a small saucepan. Bring to the boil, stirring, until the sugar has dissolved. Remove from the heat and leave to cool completely. Transfer to an airtight container and store in the fridge for up to 2 weeks.

Place the Margarita salt (1 tbsp) on a small plate. Cut the lime (1) into wedges and then rub the rims of 2 coupé glasses with one lime wedge, then dip into the salt to coat.

Add the tequila (50 ml), clemencello liqueur (20 ml), 15ml of lime juice and 10ml of the simple syrup to a cocktail shaker filled with ice (1 handful). Shake vigorously until the outside of the shaker feels ice-cold.

Fill the prepared coupé glasses with fresh ice. Strain the cocktail evenly between the glasses, then garnish with a bay leaf (2) and a slice of clementine (1).
