Heat a large non-stick frying pan over a medium-high heat. Add a splash of olive oil and the pork strips (1 pack), then cook for 4 minutes until cooked through and caramelised.

Add the pak choi (1 pack) and bamboo shoots (1 tin), then stir-fry for 2-3 minutes until just tender.

Meanwhile, place the noodles (2 nests) in a heatproof bowl, cover with boiling water and leave to soak for 5 minutes, stirring occasionally to separate the strands. Drain well.

Add the noodles to the pan and toss everything together until evenly coated and heated through.

Stir through the chilli (1), adding as much or as little as you like.

Divide between bowls, scatter over the coriander (15 g) and serve.
