Place the onions (2), garlic (4 cloves) and peppers (2) in the base of a slow cooker. Sit the brisket (1 pack) on top.

Mix together the stock pot (1), chilli con carne paste (1 pack) and tomatoes (1 tin) in a bowl. Refill the chopped tomato can with water and stir this in. Pour the mixture around the beef. Cover and cook on low for 8 hours (or add all the ingredients to a large, lidded saucepan and simmer on low for 2-3 hours), or until the beef is tender enough to pull apart.

Remove the brisket from the slow cooker and shred using two forks. Return to the sauce along with the black beans (2 jars). Stir well and cook for a further 20-30 minutes until the beans are heated through and the sauce has thickened slightly.

Meanwhile, preheat the oven to 200°C/180°C fan/gas mark 6. Grease and line a 20cm square baking tin.

In a large bowl, whisk together the melted butter (125 g), crème fraîche (150 ml), milk (150 ml) and eggs (3). Add the polenta (225 g), flour (150 g) and salt (1 tsp), mixing until just combined. Stir through 100g of the cheese (100 g).

Pour the mixture into the prepared tin and scatter over the remaining cheese (50 g) . Bake for 25-30 minutes, until golden and firm to the touch.

Leave to cool for 5 minutes before cutting into squares. Serve the brisket chilli in bowls with the warm cheesy cornbread alongside.
