Preheat the oven to 180°C/160°C fan/gas mark 6. Grease a deep 25 x 35cm baking dish with butter.

To make the spiced caramel pears, add the sugar (80 g), butter (80 g) and 1 tbsp of the everything sugar and spice (1 tbsp) to a medium frying pan set over medium heat and cook until the butter has melted. Add the pears (4) and cook for 2-3 minutes, until golden. Remove from the heat.

Combine the milk (200 ml), cream (200 ml), eggs (3) and vanilla extract (1) in a jug and whisk.

Halve each slice of the brioche loaf (300 g) diagonally, into triangles. Arrange in the tray, then nestle the pears in between and spoon over the spiced caramel sauce from the pan. Pour over the cream and egg mix, then scatter with the remaining 1 tbsp of everything sugar and spice (1 tbsp).

Bake for 25 minutes, or until the top is golden brown and the custard is just set. Serve with a little extra cream, if you like.
