Preheat the grill to high (220°C). Arrange the bacon rashers (1 pack) on a foil-lined baking tray and grill for 5-7 minutes, turning halfway, until golden and crisp. Drizzle over half of the maple spice syrup (1 tbsp) and set aside to cool.

Preheat the oven to 200°C/180°C fan/gas mark 6. Unroll one sheet of pastry (2 packs) onto a clean work surface with the longest side facing you. Arrange the bacon in 6 evenly spaced strips, running from top to bottom of the pastry, using 2 rashers laid end to end for each strip. Top with the second sheet of pastry and gently press down.

Cut the pastry vertically into 6 strips, with the bacon running through the centre of each strip. Then cut each strip lengthways through the centre of the bacon to create 12 long strips.

Working with one strip at a time, fold it back and forth in a concertina shape, making each fold slightly smaller than the one below to create a Christmas tree shape. Thread onto a bamboo skewer to hold the shape. Transfer to a large, lined baking tray and brush all over with the beaten egg (1).

Bake for 20 minutes, or until the pastry is puffed and golden brown. Remove the skewers, then brush with the remaining maple spice syrup (1 tbsp) and scatter over a pinch of flaky sea salt. Serve warm or leave to cool completely before freezing.

Once baked and cooled, freeze in an airtight container for up to 1 month. Reheat from frozen in a 180°C/160°C fan/gas mark 4 oven for 10-12 minutes until piping hot and crisp.
