Blitz the custard cream biscuits (1 pack) to a fine crumb in a food processor. Remove and set aside 1 tbsp of the crumbs. Add the cream cheese (50 g) and 70g of the custard cream spread (70 g), then pulse until you have a thick paste.

Using a teaspoon, portion the mixture into 15 pieces and roll into balls. Place on a greaseproof-lined plate and freeze for 30 minutes. If making ahead, transfer the balls to a zip-lock bag or airtight container and freeze for up to 1 month.

Put 30g of the custard cream spread (30 g) and the dark chocolate (100 g) in a heatproof bowl set over a pan of gently simmering water. Heat, stirring, until melted and smooth.

Melt the remaining custard cream spread (50 g) in the microwave.

Carefully dip each truffle into the chocolate mixture, then transfer to a clean greaseproof-lined tray. Drizzle over the melted custard cream spread in a zig-zag pattern, then sprinkle with the reserved 1 tbsp biscuit crumbs. Repeat until all the truffles are coated and decorated, then chill for at least 1 hour before serving. The truffles will keep in the fridge for 4-5 days.
step 5 Carefully dip each truffle into the chocolate mixture, then transfer to a clean greaseproof-lined tray. Drizzle over the melted custard cream spread in a zig-zag pattern, then sprinkle with the reserved 1 tbsp biscuit crumbs. Repeat until all the truffles are coated and decorated, then chill for at least 1 hour before serving. The truffles will keep in the fridge for 4-5 days.
