Purple sweet potato and black bean soup recipe

Recipe
Rich with coconut milk, with a punch from jerk spices, this creamy purple sweet potato and black bean soup recipe makes packing in the plants a joy. It’s served with crunchy taco croutons and zingy lime. We’ve made it with seasonal purple sweet potatoes for a vibrant colour, but it would work equally well with orange sweet potatoes.

Method

step 1
Heat a splash of oil in a large casserole dish over a medium heat. Add the soffritto (250 g) with a pinch of salt and cook for 5-6 minutes, until soft.
step 2
Add the sweet potatoes (750 g) and cook for 2 minutes. Stir in the jerk paste (3 tsp) and cook for a further 1 minute until fragrant. Stir in the black beans (1 jar) and coconut milk (1 tin).
step 3
Dissolve the stock pot (1) in the boiling water (550 ml) and add to the pan. Bring to a gentle simmer, then cook for 15-20 minutes until the potatoes are tender and the soup has thickened and reduced.
step 4
While the soup is cooking, cut the tacos (4) into triangles. Pop in the air fryer and drizzle with a little olive oil, then air fry at 180°C for 5 minutes, turning halfway, until crisp. Alternatively, cook in a preheated oven at 190°C/170°C fan/gas mark 5 for 10-15 minutes, turning halfway.
step 5
Squeeze the juice of one of the limes (1) into the soup and taste to check the seasoning and spice levels. Blend briefly with a hand blender – you want a few chunks remaining but some of the beans and potatoes to become creamy.
step 6
Spoon the soup into bowls and serve topped with a little fresh coriander (5 g), the finely sliced spring onions (4) and the crunchy taco croutons. Dollop a spoonful of yogurt (4 tbsp) into each bowl, if you like, and grate a little lime zest over the yogurt. Cut the lime (1) into wedges and serve this alongside.
