Preheat the oven to 220°C/200°C fan/gas mark 7, or heat an air fryer to 200°C.

Toss the potatoes (800 g) with 1 tbsp olive oil and a pinch of salt. Spread out on a lined baking tray and roast for 30 minutes, turning halfway through, until crisp and golden. Alternatively, cook in the air fryer for 25 minutes, shaking occasionally.

Meanwhile, heat a large non-stick frying pan over a medium-high heat. Add a little oil and cook the beef mince (1 pack) for 7-10 minutes, breaking it up with a spoon, until browned and caramelised. Transfer to a bowl.

Add another drizzle of oil to the pan and add the onion (1) and peppers (2). Cook for 5-7 minutes, until softened. Stir in the garlic (2 cloves) and cook for 1 minute.

Return the beef to the pan and add the smoked paprika (2 tbsp), chopped tomatoes (1 tin), sugar (1/2 tsp) and salt (1/2 tsp). Bring to a simmer and cook for 10 minutes, stirring occasionally, until rich and thickened.

Stir through the sherry vinegar (1 tbsp) and season to taste.

Divide the crispy potatoes between four bowls and spoon over the smoky beef sauce. Drizzle generously with the roasted garlic aioli (1 tub), scatter over the parsley (15 g) and finish with a pinch of smoked paprika to serve.
