Place the beef mince (1 pack), breadcrumbs (50 g), curry powder (1 tbsp) and a pinch of seasoning in a bowl. Mix well and shape into 24 meatballs.

Heat a little oil in a large non-stick frying pan over a medium-high heat and cook the meatballs for 8-10 minutes, turning occasionally, until browned all over. Remove and set aside.

Meanwhile, to make the sauce, soak the cashews (75 g) in boiling water for 10 minutes.

Heat a splash of vegetable oil (1 tbsp) in the frying pan and cook the onion (1) for 5-7 minutes until softened and lightly golden.

Drain the cashews, then blend with the cooked onion, garlic paste (1/2 tbsp) and ginger paste (1/2 tbsp), curry powder (1 tbsp), coconut milk (1 tin) and mango chutney (2 tbsp) until smooth.

Pour the sauce into the pan and bring to a gentle simmer.

Return the meatballs to the pan and simmer gently for 10 minutes. Add a splash of water to loosen if needed.

Add the broccoli (100 g) and cook for a further 5 minutes until tender. Stir through the spinach (50 g) and cook until wilted.

Microwave each pack of coconut rice (2 packs) for 1 minute 30 seconds each.

Divide the coconut rice between bowls, spoon over the korma meatballs and vegetables, then scatter with the fresh coriander (1 handful) and cashews (40 g) to serve. Serve with dollops of mango chutney (as needed), if you like.
