Blitz the oats (50 g) in a food processor to a flour-like consistency. Add to a large bowl and whisk with the flour (200 g), bicarbonate of soda (1 tsp), baking powder (2 tsp), cinnamon (1 tsp) and salt (1/2 tsp).

In a separate bowl, whisk half of the orange zest (1/2) with the eggs (2), honey (1 tbsp) and yogurt (450 g).

Pour the wet mixture into the dry and stir gently until just combined (a few lumps are OK!). Allow to rest for 10 minutes, or up to 30.

If you’d prefer to eat all the pancakes at the same time, preheat the oven to 150°C/130°C fan/gas mark 2 to keep them warm while you cook.

Heat a knob of butter (as needed) with a splash of neutral oil in a large non-stick frying pan over a medium heat. When hot, add heaped tablespoonfuls of batter to the pan to form pancakes, then top each with three slices of bananas (3). Cook until bubbles form – around 2 minutes – then flip and cook for a further minute until golden brown. Repeat with the remaining batter, keeping the cooked pancakes warm on a parchment-lined baking tray in the oven, if you like.
