Bring a large pan of salted cold water to the boil, then cook the potatoes (1.2 kg) for 15 minutes, until just tender. Drain and allow to steam dry for 5-10 minutes.

Preheat the oven to 220°C/200°C fan/gas mark 7.

Add the potatoes to an oiled 25 x 30cm baking tray. Use the back of a mug to smash the potatoes gently, pushing them together to form one giant potato layer. Season with salt and pepper and drizzle with more oil.

Roast for 25 minutes, until starting to go golden, then carefully flip. Top with the cheese (75 g) and cook for a further 5-7 minutes until the cheese is melty and golden.

While the potatoes are cooking, combine the tomatoes (4), basil (5 g) and balsamic (2 tsp) in a small bowl and season with salt and pepper.

Wilt the spinach (100 g) in a small saucepan of salted boiling water for 1 minute, then squeeze out any excess moisture. Drizzle with a little olive oil and season with salt and pepper.

Heat a splash of oil over a medium-high heat in a large non-stick frying pan and crack in the eggs (4). Fry for 3 minutes, or until cooked to your liking. Sprinkle the yolks with the everything seasoning (2 tsp).

Serve the smashed potatoes with the spinach, fried eggs and tomatoes, with a little ketchup (as needed) on the side, if you like.
