Preheat the oven to 180°C/160°C fan/gas mark 4. Heat a large, lidded ovenproof casserole dish over a medium-high heat. Add a generous glug of vegetable oil, followed by the Thai red curry paste (5 tbsp). Cook for 1-2 minutes, then add the diced beef (1 pack) and cook for 10-12 minutes, until starting to brown.

Pour in the coconut milk (1 tin) and beef bone broth (4 pieces) along with 200ml of water. Bring to the boil, then reduce the heat to a simmer and stir in the tamarind paste (2 tbsp), fish sauce (2 tbsp), ground coriander (1 tsp), ground cumin (1 tsp), cardamom (1 tsp) and cloves (1 tsp). Add the onion (1), parsnips (3), carrots (2) and potatoes (2) and simmer for 5 minutes.

Pop the lid on and transfer to the oven for 2 ½ hours, or until the beef is completely tender (top up with water if the curry thickens too much).

When you are 15 minutes away from serving, rinse the rice (200 g) under cold water until the water runs clear. Add to a saucepan and cover with 1 litre of boiling water. Bring to a boil, then cover with a lid and reduce to a simmer for 10-12 minutes. Drain well and then serve.

Season the curry to taste with salt and pepper. Squeeze in the juice of 1 lime (1)

Serve the jasmine rice in bowls and top with the curry. Top with a scattering of Thai basil leaves (5 g) and the remaining lime (1), cut into wedges.
