Preheat the oven to 200°C/180°C fan/gas mark 6. Cut the pitta breads (6) into triangles and arrange on a large baking tray. Drizzle with olive oil. Bake for 15 minutes, turning halfway, until golden and crisp.

Meanwhile, add the chickpeas (1 jar) to a second baking tray. Sprinkle with 1 tsp of the Greek seasoning (1 tsp) and grate over the lemon zest (1). Drizzle with olive oil and season with salt and pepper, then toss to coat. Bake at the same time as the pitta chips for 10-15 minutes until golden and crispy.

To a large bowl, add the juice of the lemon, the remaining 1 tsp Greek seasoning (1 tsp) and the vinegar (1 tbsp). Add the onion (1/2), tomatoes (6), cucumber (1/2), olives (2 tbsp) and olive oil (2 tbsp) with most of the mint (5 g), saving a few leaves to garnish, and a pinch of salt. Set aside.

To assemble, lay the pitta chips on a large platter. Blob over the dip (1 tub), then top with the salad. Finish with the chickpeas, crumble over the Greek salad cheese (100 g) and some more fresh mint leaves.
