Blitz the bread (1 slice) in a food processor to form breadcrumbs and set aside.

Cook the jacket potatoes (4) in the microwave for 7 minutes, according to the pack instructions.

Meanwhile, mix the soured cream (4 tbsp), mayonnaise (2 tbsp) and lemon zest (1) in a small bowl and season with black pepper. Set aside.

Heat a large non-stick frying pan over a medium heat and cook the bacon (1 pack) for 4-5 minutes, turning halfway, until crisp.

Remove the bacon from the pan and set aside on kitchen paper. Pop the same pan back on the heat, then fry the breadcrumbs for 2-3 minutes, stirring occasionally, until golden brown and crisp.

Dress the tomatoes (300 g) and lettuce (2 heads) with a squeeze of lemon juice and drizzle with olive oil (2 tbsp).

To assemble the potatoes, top with the lettuce and tomatoes, bacon, lemony soured cream mayo and crunchy bacon breadcrumbs.
