Preheat the oven to 200°C/180°C fan/gas mark 6. Add the Thai red curry paste (1 jar) and coconut milk (1 tin) to a large roasting dish (24 x 35cm) and mix well. Add the chopped pak choi (2) and mix through.

Lay the gyozas (1 pack) on top and then cover tightly with foil. Bake for 25 minutes, until the dumplings are tender.

Meanwhile, heat the sticky rice (2 pouches) in the microwave for 2 minutes, according to the packaging instructions.

Spoon the rice into bowls and top with the gyozas, pak choi and sauce. Scatter over the spring onions (2) to serve.
