Preheat the oven to 200°C/180°C fan/gas mark 6.

Arrange the potatoes (1.1 kg) in a single layer on a large baking sheet (use two if needed) and drizzle with olive oil. Season with salt and pepper. Bake for 30-35 minutes, turning halfway, until tender and golden.

While the potatoes are cooking, mix together the tuna (2 tins) and mayonnaise (4 tbsp). Season with black pepper and set aside.

Heat a small splash of oil in a medium frying pan over a medium-high heat. Add the sweetcorn (150 g) and cook for 7 minutes, shaking the pan occasionally, until the sweetcorn is golden brown. Add to a bowl with the tomatoes (4), lime zest and juice (1), and the parsley (5 g), reserving a small handful to garnish. Season with salt and pepper.

Remove the potatoes from the oven and blob over the tuna mix. Scatter over the grated cheddar (60 g). Return to the oven for 5 minutes until the tuna is golden and bubbling.

Serve the melty, cheesy tuna wedges with the tomato and sweetcorn salsa spooned on top and some extra fresh parsley.
