Preheat oven to 180°C/160°C fan/gas mark 6. Lightly grease a small baking dish (around 21x17cm) with butter (as needed).

Mix the oats (100 g), ground almonds (60 g) and baking powder (1 tsp) in a bowl.

Whisk the almond drink (200 ml), egg (1), maple syrup (2 tbsp), vanilla extract (1 tsp) and almond extract (1/2 tsp) in a separate bowl.

Stir the wet mixture into the dry ingredients and fold through half of the sliced plums (1).

Pour into the dish and top with remaining plums (1). Bake for 25 minutes, until just set. Remove from the oven and scatter over the toasted flaked almonds (2 tbsp) and demerara sugar (2 tsp). Return to the oven for 10 minutes, until lightly caramelised.

Serve with a generous dollop of yogurt (as needed).
