Heat the grill to high (220°C).

Add half of the turmeric (1 tsp), half of the soy sauce (1 tbsp), the oil (1 tbsp) and the juice of half a lime (1/2) to a large bowl. Add the |chicken (650 g) and mix well to coat. Thread the chicken and pineapple chunks (1/2) onto skewers and transfer to a foil-lined baking tray and grill for 15 minutes, turning halfway, until charred and cooked through.

Meanwhile, add the peanut butter (75 g), remaining turmeric (1 tsp), the juice of 1½ limes (1 1/2), honey (1 tbsp), remaining soy sauce (1 tbsp) and the ginger (1 tbsp) to a bowl. Mix with 2-3 tbsp boiling water until smooth.

Add the cucumber (1) and red chilli (1) to a bowl with a pinch of salt and the remaining juice of 1 lime (1).

Heat the rice (2 pouches) in the microwave for 2 minutes per pouch, according to the pack instructions, then spoon onto four plates.

Serve the rice with the chicken and pineapple, the cucumber and the satay sauce drizzled over.
