Preheat the oven to 180°C/160°C fan/gas mark 4.

To make the crumble topping, melt 50g of the butter (50 g) in a microwave for 30 seconds. Add 50g of the brown sugar (50 g), 70g of the flour (70 g) and the oats (25 g) to a bowl and mix well. Pour in the melted butter and stir with a fork until you have a crumbly mixture with some clusters – don’t overmix. Set aside.

Beat the remaining butter (60 g) with the rest of the sugar (75 g) until light and creamy. Add the egg (1) and yogurt (60 g) and mix to combine. Stir through the apples (180 g), then add the remaining flour (100 g), baking powder (1/2 tsp), bicarbonate of soda (1/2 tsp) and cinnamon (1 tsp). Mix until just combined.

Divide between 6 muffin cases, then scatter over the crumble topping, pressing down lightly. Bake for 25 minutes, until golden and cooked through – a skewer inserted into the centre should come out clean.
