Preheat the oven to 220°C/200°C fan /gas mark 7. Place the chicken (1 pack) on a preheated baking tray and cook in the centre of the oven for 23 minutes, until cooked through.

While the chicken cooks, microwave the rice (2 packs) for 1 minute 30 seconds, then tip onto a lined tray. Break up any clumps and allow to steam off briefly. Toss with the tikka paste (2 tbsp), avocado oil (2 tbsp) and a pinch of salt, then spread into a thin, even layer.

Bake for 20-25 minutes, stirring halfway through, until golden and crisp. Return to the oven for a few extra minutes if needed, then leave to cool slightly to firm up.

In a large bowl, combine the chicken, cucumber (1), spring onions (3), chickpeas (1 jar), mint (1 handful), coriander (1 handful) and lime juice (1). Season to taste.

Add the crispy rice and gently toss with the Indian-style dip (1 pot). Top with pomegranate seeds (as needed) and pickled red onions (as needed) to serve.
