Preheat the oven to 180°C/160°C fan/gas mark 6. Line a 12-hole muffin tin with cupcake cases.

Add the butter (150 g), sugar (150 g), eggs (3), flour (150 g), baking powder (1 tsp) and lemon zest (1) to a large bowl and beat with an electric hand whisk for 2-3 minutes, until well combined.

Spoon into the cases, then bake for 15-20 minutes, until well risen and golden brown and then cool on a wire rack.

Meanwhile, to make the icing beat together the butter (50 g) and icing sugar (100 g) until light and fluffy.

Once the cakes have cooled, cut a 2.5cm disc from the top of each, around ½ cm deep, leaving a small gap around the edge. Cut the discs in half.

Fill the gap in the cakes with lemon curd (4 tbsp), then pipe or spoon a swirl of icing on top. Decorate with the cut cake to look like butterfly wings, then press a Percy Piglet (as needed) into each and scatter with Percy Pig sprinkles (as needed).
