Lay the lamb cutlets (1 pack) and lamb chops (1 pack) on a tray. Drizzle with 1 tbsp olive oil and sprinkle with salt, pepper and the shawarma seasoning (1 tbsp). Let them sit for a few minutes while you prepare the couscous.

Bring the chicken stock (450 ml) to the boil. Put the couscous (300 g) in a heatproof bowl, season with salt and pepper, pour over the hot stock and stir. Cover tightly with cling film and leave for 10 minutes.

Heat a BBQ or griddle pan over medium-high heat. Start by placing the lamb fat-side down to render and crisp the fat. Then cook for 2-3 minutes on each side until nicely charred. Transfer to a tray and let rest for a few minutes, keeping the juices.

Fluff the couscous with a fork. Add the red onion (1), cucumber (4), tomatoes (150 g), mint (1 handful), half the pomegranate seeds (150 g), olive oil (3 tbsp), pomegranate molasses (2 tbsp) and lemon juice (1). Season, mix well, and spoon onto your serving platter. Top with the crumbled feta (100 g) and the remaining pomegranate seeds.

Arrange the lamb over a platter, pouring over any resting juices. Serve with the pomegranate couscous alongside.
