Preheat the oven to 200°C/180°C fan/gas mark 6.

Season the chicken thighs (1 kg) generously. Heat the olive oil (2 tbsp) in a large frying pan over a medium-high heat. Place the thighs skin-side down and cook for 6-8 minutes until golden and crisp. Turn and cook for a further 2 minutes. Transfer to a roasting tray.

Add the fennel wedges (2) (keep the fronds and chop them for the ricotta) and garlic (4 cloves) to the pan and cook for 4-5 minutes, turning occasionally, until lightly golden. Transfer to the tray with the chicken. Pour the chicken stock (150 ml) into the pan, scraping up any browned bits from the base. Stir in the blood orange juice (1) and bring to the boil. Pour over the chicken and fennel, then roast for 25 minutes, or until the chicken is cooked through and the fennel is tender.

Meanwhile, make the vinaigrette. Whisk together the blood orange juice (1), Dijon mustard (1 tsp), honey (1 tsp), sherry vinegar (1 tbsp), chilli (1) and extra virgin olive oil (6 tbsp). Season to taste.

In a small bowl, mix the ricotta (250 g) with the blood orange zest (1/2) and chopped fennel fronds. Season with salt and black pepper.

Combine the red chicory (2 heads), white chicory (2 heads), rocket (2 handfuls) and blood orange segments (2) in a large bowl. Spoon over the vinaigrette and toss gently to coat.

Divide the chicken and fennel between plates, spooning over the roasting juices. Serve alongside the salad, then finish with a dollop of ricotta and a sprinkle of chopped pistachios (3 tbsp).
