Preheat the oven to 200°C/180°C fan/gas mark 6.

Add 100g of the butter (100 g) to a small saucepan over a medium-high heat and cook for 3-4 minutes until golden brown and nutty. Pour into a heatproof bowl, then stir through the capers (3 tsp), lemon zest (1/2) and chopped dill (1 tbsp).

Rinse the rice (400 g) thoroughly until the water runs clear. Place a large saucepan over a medium-high heat and melt the remaining butter (50 g) with a splash of oil. Add the onion (1) and a pinch of salt, then cook for 3-4 minutes until softened.

Stir in the rice, saffron (1 pinch) and chicken stock (800 ml). Season lightly, bring to the boil, then reduce to a simmer. Cover and cook for 12 minutes.

Remove the rice from the heat and stir through the peas (150 g) and 2 tbsp of the parsley (2 tbsp). Cover again and leave to stand for 5 minutes.

Meanwhile, place the cod loins (4) on a baking tray and season well. Spoon over the browned butter mixture and bake for 8-10 minutes, or until the fish flakes easily.

To make the gremolata, mix together the garlic (1 clove), chopped lemon zest (1/2), remaining parsley (3 tbsp) and remaining dill (1 tbsp).

Fluff the rice with a fork, then divide between serving plates. Top with the cod, spoon over any buttery pan juices and finish with the gremolata. Serve with lemon wedges (as needed) alongside.
