Preheat the oven to 200°C/180°C fan/gas mark 6 with the grill on.

Bash the chicken (4) with a rolling pin and season with salt and pepper. Place the flour (80 g) into a shallow dish and season well. Put the eggs (2) into a second dish, and the breadcrumbs (100 g) into a third. Dip each piece of chicken into the flour, coating both sides, then the egg and the breadcrumbs.

Heat a generous splash of olive oil in a large non-stick frying pan over medium heat. Working in batches, cook the chicken breasts for 3 minutes on each side until golden brown. Remove and set aside on an ovenproof tray.

Cook the pasta (300 g) in boiling salted water for 8 minutes. Drain, then run under cold water and transfer to a mixing bowl.

Briefly blitz the garlic (2 cloves), Pecornio (50 g), pine nuts (50 g) and olive oil (120 ml) in a small food processor, then add the rocket (120 g) and basil (10 g) and blitz again. Season to taste, then add the red wine vinegar (2 tbsp) and blend again.

Spoon 2 tbsp pesto over each chicken breast then lay the sliced mozzarella (230 g) on top. Bake on the top shelf of the oven for 10 minutes.

Toss the remaining pesto through the pasta, then stir in the tomatoes (150 g) and olives (80 g) and a few extra pine nuts. Serve with the chicken.
