step 1
Preheat the oven to 180°C/160°C fan/gas mark 4, and grease and line a loose-bottomed 9-inch round cake tin. Whisk the olive (150 g) and sugar (180 g) in a large bowl for 3 minutes, then whisk in one egg (3) at a time. Stir in the flour (250 g), baking powder (1 1/2 tsp) and a pinch of salt. Whisk in the vanilla paste (1 tsp), milk (2 tbsp) and lemon zest (1) and orange zest (1).

Pour the batter into the tin and lay the fig slices (350 g) on top. Bake on a tray for 50-60 minutes, until a skewer, when inserted, comes out clean. Allow to cool for 5 minutes, then drizzle over the honey (3 tsp) while still warm. Remove from the tin.  Serve in slices with a dollop of mascarpone (400 g).
