For the pickled grapes

3 tbsp

For the pork fillets

Select Farms British pork fillets, sinew trimmed

4 sprigs

For the dressing

M&S British echalion shallot, finely diced
1 tsp
wholegrain mustard
1 tsp
Dijon mustard

Place the sliced grapes (150 g) in a bowl, add the fig vinegar (3 tbsp), mix well and leave to pickle for 15 minutes.

Heat a medium frying pan over a high heat. Season the pork (2) on all sides. Add a splash of oil, then the pork, and brown evenly. Lower the heat slightly, add the butter (50 g), garlic (2 cloves) and thyme (4 sprigs), and baste until the pork is cooked through. Pour in the white wine vinegar (1 tbsp) and transfer the pork to a tray or plate to rest.

For the dressing, add the shallot (1) to a mixing bowl with wholegrain mustard (1 tsp), Dijon mustard (1 tsp), fig vinegar (1 tbsp) and white wine vinegar (1 tbsp). Whisk together, then slowly whisk in the olive oil (120 ml) until emulsified. Season to taste.

Arrange the red chicory (2 heads) and white chicory (3) on serving plates. Spoon over the dressing and scatter over some of the pine nuts (50 g), blue cheese (100 g) and a few pickled grapes.

Slice the pork into thick pieces and add to the plates. Spoon over the resting juices and finish with the remaining pine nuts and pickled grapes.
