Preheat the oven to 200°C/180°C fan/gas mark 6. Lightly butter a 25 x 18cm baking dish. Arrange the crumpets (1 pack) in the dish, slightly overlapping, then scatter over most of the berries (200 g), tucking them between the crumpets.

In a bowl, whisk together the cream cheese (200 g) and caster sugar (60 g) until smooth. Whisk in the eggs (2), followed by the double cream (150 ml), milk (100 ml), vanilla extract (1 tsp) and lemon zest (1/2) until combined.

Pour the custard mixture evenly over the crumpets, then dot over the berry preserve (2 tbsp). Bake for 30-35 minutes, until set with a slight wobble in the centre.

Leave to stand for 5-10 minutes to firm up slightly. Dust with icing sugar (as needed) and serve warm with extra berries.
