Preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the mediterranean-style vegetables (1 pack), tomatoes (220 g), lentils (1 jar), sherry vinegar (2 tbsp) and tomato paste (2 tbsp) in a large (30cm x 40cm) roasting tray. Drizzle with olive oil and season with salt and pepper, tossing well so that everything is nicely coated. Nestle the sausages (1 pack) on top.

Bake for 25-30 minutes, flipping the sausages halfway, until the sausages are cooked. Finish with flat-leaf parsley (5 g).
