Heat the grain mix (2 pouches) in the microwave according to the pack instructions for 2 minutes, and pop into a large bowl. Pit and halve the cherries (200 g) and thinly slice the red peppers (2). Roughly chop the dill (10 g) and parsley (10 g) and thinly slice the spring onions (3), and stir both through the grains, along with the cherries and peppers.

To make the dressing, shake together the olive oil (5 tbsp), sherry vinegar (3 tbsp), pomegranate molasses (1 tbsp) and Dijon mustard (1 tsp) in a clean jam jar and season with salt and pepper. Taste and adjust the seasoning and acidity, if needed.

Toss the dressing through the salad, then crumble over the feta (150 g). This salad can be made up to a day ahead – the flavours only get better when it’s allowed to sit for a while.
