Allow the Suino Nero (1/2 pack) to come to room temperature for 15 minutes before assembling the salad.

In a large salad bowl, add the melon (1/2), cucumber (3), tomatoes (1 pack), red onion (1) and mozzarella (1 pack) and mix together. Roughly tear over the Suino Nero and add to the salad.

In a clean jam jar, shake the olive oil (2 1/2 tbsp), balsamic vinegar (1 1/2 tbsp), lemon juice (1) and basil (1 handful) together until well combined. Season with a pinch of salt.

Pour the dressing over the salad and toss together.
