Place the aubergines (2) in the air fryer basket and season with salt and pepper, then drizzle with oil. Air fry at 180°C for 15 minutes, turning halfway, until crisp and tender.

Meanwhile, add the ghee base from the curry kit (1 pack) to a deep sauté pan over a medium-low heat and cook 3-4 minutes, until fragrant. Add the cherry tomatoes (250 g), a pinch of salt, and then turn the heat up to medium and cook for a further 4 minutes until they’ve started to break down.

Meanwhile, measure the rice (250 g) into a small saucepan using a cup. Fill the cup with double the amount of water to rice and add this to the pan too. Season with salt then bring to the boil. Pop a lid on the pan, turn down the heat to low, and cook for 8 minutes. Leave the lid on the pan for a further 4-5 minutes to steam.

Stir the sauce from the curry kit into the pan with the tomatoes, along with the coconut cream (1 tin), water (100 ml) and aubergines.

Add the green beans (200 g) and simmer over a medium heat for 5 minutes until the beans are tender and the curry has thickened slightly. Season to taste with salt and pepper.

When the curry and rice are almost ready, heat the butter (1 tbsp) in a separate small frying pan and add the spices from the curry kit. Sizzle for 1-2 minutes, then stir into the curry (skip this bit if feeding little ones who don’t love it super spicy). Serve with the rice and poppadoms (1 pack).
