Preheat the oven to 200°C/180°C fan/gas mark 6. Arrange the potatoes (700 g) on a flat baking tray and drizzle with a little olive oil, then toss in the seasoning (1 tbsp). Roast for 25-30 minutes, stirring halfway, until golden and fluffy in the middle.

Meanwhile, heat a splash of oil in a medium frying pan over medium-low heat and add the onions (3) with a pinch of salt. Cook, stirring occasionally, for 15-20 minutes or until sticky and caramelised (add a splash of water if the onions are starting to catch).

When the potatoes have had 10 minutes, place the mushrooms (4) on a baking tray and season with salt and pepper then drizzle with olive oil. Bake for 10 minutes, until the mushrooms are tender, then top with the caramelised onions and Stilton (100 g) and return to the oven for a further 10 minutes, until melted.

Toast the burger buns (4) in a dry pan for a minute on each side. To assemble, spoon the slaw (1 pack) onto the burger buns, top with a slice of tomato (1), the mushroom and fiery pickles (as needed). Serve with the wedges on the side.
