Combine the tomatoes (350 g), onion (1) and lime zest and juice (1) in a small bowl with a pinch of salt and set aside.

Heat the tacos (1 pack) in a dry frying pan over a medium-high heat for 10-20 seconds on each side, according to the pack instructions, then keep warm in a clean tea towel.

Heat a splash of oil in a non-stick frying pan over a medium heat, then season the eggs (8) with salt and pepper. Add the eggs to a pan and cook, stirring, for 3-4 minutes until scrambled to your liking. Serve the tacos topped with the eggs, tomato salsa and hot sauce (as needed).
