Heat a glug of olive oil in a large frying pan (or paella pan if you have one) over medium-high heat. Add the onion (1) and garlic (3 cloves) and cook for 5-7 minutes, until translucent.

Add the red pepper (1), paprika (1 tbsp) and grated tomato (1). Cook for 5 minutes until you have a thick paste and then tip in the paella rice (320 g) and toast for 1-2 minutes.

Dissolve the stock pot (1) in the boiling water (750 ml), then pour into the rice. Stir through the flat beans (200 g), drained butter beans (1 jar) and peas (150 g), then carefully mix to combine.

Simmer the rice over medium heat for 6 minutes, without stirring.

Lower the heat and continue to cook for 15 minutes, or until all of the stock has been absorbed by the rice.

Remove from the heat, then cover with a clean tea towel and set aside for 5 minutes to allow the rice to absorb any extra steam.

Meanwhile, add the minced garlic (2 cloves), lemon juice (1/2) and olive oil (1 tbsp) to the yogurt (100 g). Season with salt and pepper.

Serve the paella in bowls with a dollop of yogurt aioli.
