Heat the air fryer to 200°C. Add the courgettes (2) to the basket, drizzle with a little olive oil and toss to coat. Place the chicken thighs (1 pack) on top, season with salt and drizzle with a little more oil. Air fry for 20 minutes, until the chicken is cooked through, removing the courgettes after 15 minutes.

Tip the drained chickpeas (2 jars) into a bowl and stir in the tzatziki (1 tub), spring onions (3), dill (15 g) (reserve a handful to garnish) and mint (15 g). Squeeze in the juice of 1 lemon (1) and season to taste with salt and pepper.

Divide the tzatziki chickpeas between bowls and top with the chicken and courgettes. Finish with the reserved dill and serve with the remaining lemon (1), cut into wedges.
