Bring a large pan of salted water to the boil and cook the pasta (400 g) for 9-11 minutes, until al dente.

While the pasta is cooking, heat a splash of oil in a deep sauté pan over a medium heat and add the whites of the spring onions (1 bunch). Add the cherry tomatoes (1 pack) and garlic (4 cloves) and cook for 4-5 minutes until the onions are softened and the tomatoes have blistered.

Meanwhile, add 200g of the sweetcorn (200 g) to a large bowl.

Add a cup of the pasta cooking water to the bowl with the sweetcorn and blitz with a hand blender until smooth. Stir in the cheddar (75 g) to melt. Stir into the pan with the spring onions and tomatoes, followed by the smoked paprika (1/2 tsp) and remaining sweetcorn (75 g).

Drain the pasta using a slotted spoon and toss through the sauce, adding a splash more cooking water as needed to loosen.

Serve with the fresh basil leaves (5 g), the greens of the spring onions, a little extra cheddar, and a drizzle of chilli oil (as needed), if you like.
