Method

step 1
Preheat the air fryer to 180°C. Arrange the hash brown fries (1 pack) in a single layer in the basket. Cook for 10 minutes, turning halfway, until crisp. Alternatively, preheat the oven to 220°C/200°C fan/gas 7, place on a preheated baking tray and cook on the top shelf for 10 minutes, turning halfway.
step 2
While the hash brown fries are cooking, heat a large frying pan or skillet over high heat. Season the steaks (1 pack) with salt and pepper and cook for 1 minute on each side. Remove from the pan and set aside on a plate to rest.
step 3
In the same pan, add the butter (1 tbsp) and cook the mushrooms (1 pack) over medium-high heat for 3–4 minutes until golden and softened.
step 4
Add the garlic (1 clove) and cook for 30 seconds, then add the spinach (120 g) and cook until wilted. Season with salt and pepper.
step 5
Reduce the heat to medium and make four small gaps in the pan. Crack the eggs (4) into the pan, cover and cook to your liking.
step 6
While the eggs are cooking, slice the steak against the grain.
step 7
Remove the eggs from the heat and top with cheddar (30 g) and steak. Finish with some sriracha (to taste), if you like.
step 8
Serve immediately with crispy hash browns on the side.
