Rinse the couscous (200 g). Bring 500ml water to a boil in a saucepan and add the couscous. Stir, cover with lid and simmer for 6-8 minutes. Once cooked, drain, cover and set aside.

Heat olive oil in a large frying pan and then add the frozen chargrilled vegetable mix (1 bag) and cook for 10 minutes until softened.

Fry the halloumi slices (250 g) in a hot non-stick pan for 2-3 minutes per side until golden brown and crisp at the edges.

Warm the lentils (1 tin) in a pan or microwave until heated through.

Add a drizzle of olive oil, half the lemon juice (1/2), and salt and pepper to the couscous.

Assemble the bowls by dividing the couscous, lentils, and chargrilled vegetables evenly between four plates or containers.

Top with grilled halloumi a generous drizzle of green goddess dressing (6 tbsp), lemon zest and remaining lemon juice (1/2) and mint (1 handful).
