Heat the oven to 220°C/200°C fan. Spread the chips (700 g) onto a large-lined tray and cook for 20 minutes until starting to crisp.

Add the chicken (8) to a bowl with the cornflour (2 tbsp) and toss to coat. Add the salt (3 tsp), pepper (2 tsp), Chinese five spice (2 tsp) and chilli flakes (2 tsp) to a small mixing bowl.

Push the chips to one side of the tray and add the chicken. Drizzle with vegetable oil and coat both the chips and chicken in the seasoning. Return to the oven for 20 minutes, turning halfway, until golden.

Add the onion (1), red pepper (1) and garlic (3 cloves) and cook for a further 10 minutes.

Drizzle over the soy sauce (2 tbsp) and sesame oil (3 tsp), then toss again until everything is coated.

Scatter over the spring onions (3) and serve immediately with curry sauce (1 tub).
