Remove the stems from the strawberries (500 g) and halve, saving a small handful of whole strawberries to decorate.

To make the strawberry compote, add the frozen strawberries (250 g), caster sugar (3 tbsp), vanilla extract (1 tsp), lemon juice and zest (1/2) to a small saucepan set over a medium heat. Bring to a gentle simmer and cook for 10 minutes, stirring regularly, until reduced and syrupy. Allow to cool.

Lightly whip the cream (300 ml) until soft peaks form, then swirl through 1/3 of the frozen strawberry compote.

Cut the Madeira cake (1) into 3cm chunks.

To assemble, add the Madeira cake chunks to a large trifle dish, pour over 1/3 of the compote, and top with half of the ice cream (500 g). Layer with half of the whipped cream and half of the strawberries. Repeat until you’ve used all the ice cream, cream and berries, finishing by decorating with scoops of ice cream, fresh strawberries, meringue (1 pack) and mint (1 handful).
step 5 To assemble, add the Madeira cake chunks to a large trifle dish, pour over 1/3 of the compote, and top with half of the ice cream (500 g). Layer with half of the whipped cream and half of the strawberries. Repeat until you’ve used all the ice cream, cream and berries, finishing by decorating with scoops of ice cream, fresh strawberries, meringue (1 pack) and mint (1 handful).
