Bring a large saucepan of water to the boil. Add the egg noodles (4 nests), remove from the heat and leave to stand for 4 minutes, stirring occasionally to separate the strands. Drain well and set aside.

Meanwhile, whisk together the garlic (2 cloves), ginger (2 cm), soy sauce (60 ml), sesame oil (1 tsp), pineapple juice (100 ml), water (100 ml), rice vinegar (1 tbsp), honey (50 g) and cornflour (2 tbsp) in a bowl or clean jam jar until smooth and lump‑free.

Heat a large wok or non‑stick frying pan over a medium‑high heat. Add a splash of oil, then stir‑fry the spring onions (2), Tenderstem broccoli (200 g) and red pepper (1) for 5 minutes until just tender but still vibrant.

Add the prawns (1 pack) and edamame beans (200 g) to the pan and cook for 2 minutes, stirring frequently, until the prawns turn pink and are just cooked through. Pour in the sauce and add the drained noodles. Toss everything together and simmer for 2-3 minutes, until the sauce thickens and coats the noodles evenly.
