Brush the peaches (4) with a little oil. Heat a griddle pan over a medium heat until hot, place the peaches cut side down and cook for 2-3 minutes on each side until slightly charred. Set aside to cool for a few minutes.

In a large salad bowl, combine the tomatoes (2), red onion (1), rocket (1 bag), basil (1 handful), serrano ham (1 pack) and feta (1 pack). In a small jug or bowl, whisk together the lemon juice (1) and olive oil (3 tbsp) for the dressing.

Add the peaches to the salad, drizzle over the dressing and toss gently to combine. Season to taste with salt and pepper.

Finish with a drizzle of balsamic glaze (as needed) and a sprinkle of the top that seasoning (2 tsp) and serve straight away.
