step 1
Toast the sesame seeds (2 tbsp) in a dry pan over a medium heat for 2 minutes, shaking the pan occasionally, until toasted and golden. Set aside.

Half-peel the cucumber (1/2) in alternating strips, then cut in half lengthways and scoop out the seeds. Place on a board and bash with a rolling pin a few times to break down, then roughly chop. Spoon over the soy sauce (2 tbsp), sesame oil (2 tsp) and vinegar (1 tbsp) and stir to combine.

Combine the tuna (1 jar) and the mayonnaise (2 tbsp) in a small bowl.

Heat the rice (1 pouch) in the microwave according to the pack instructions.

Slice the avocado (1) and season with a little salt.

Divide the rice between the two bowls, then top with the smacked cucumber, sliced avocado and tuna. Spoon over any remaining dressing from the cucumber. Break over the nori sheets (2) into bite-sized pieces, and sprinkle with the toasted sesame seeds.
