Preheat the oven to 180°C/160°C fan/gas mark 5.

Melt the butter (100 g) in a saucepan and then add the brown sugar (100 g) and maple syrup (150 ml). Heat until the sugar has dissolved and then remove from the heat and allow to cool slightly.

While the butter mix is cooling, chop 100g of the king pecans (100 g).

Pop the pastry case (1) onto a greaseproof lined baking tray. Add the eggs (2) and vanilla extract (1 tsp) to the butter mix and stir to combine. Fold in the chopped pecans and then spoon into the tart case. Top with the remaining whole king pecans (50 g) and bake for 25 minutes, until just set with a slight wobble.

Allow to cool completely. Cut the pie into slices and serve with a scoop of vanilla ice cream (as needed), topped with chopped blond pecans (as needed) and a touch of flaky sea salt.
