Heat a drizzle of olive oil in a large, deep, lidded pan over a medium heat. Add the chicken (1 pack) and season with salt and pepper and cook for 5-6 minutes until lightly golden.

Add the onions (1) and cook for 3-4 minutes until softened. Stir in the halloumi (250 g), garlic (3 cloves) and Greek seasoning (2 tsp) and cook for a further 2 minutes.

Scatter over the couscous (200 g) and stir through the tomato paste (1 jar). Cook for 1 minute, then pour over the chicken stock (500 ml) and stir well to combine.

Bring to the boil and cover with a lid. Reduce the heat and simmer gently for 10 minutes, stirring every few minutes so it doesn’t stick. If the couscous begins to dry out while cooking, top up with a splash of water as needed and stir gently.

Stir through the frozen peas (200 g), cover again and cook for a final 3 minutes.

Remove from the heat and leave to stand for 2-3 minutes, then fluff gently with a fork. Serve with lemon wedges (1) and a scattering of chopped parsley (1 handful). Drizzle with garlic aioli (as needed), if you like.
