Preheat oven to 200°C/180°C fan/gas mark 6. Bake the pan de cristal (2 packs) for 15 minutes until crisp and golden.

While the pan de cristal are cooking, top and tail the baby courgettes (2 packs) and halve lengthways. Toss in avocado oil (2 tbsp) and a pinch of salt. Heat a frying or griddle pan until hot and cook the courgettes cut-side down first until nicely charred, softened, but still holding their shape. Repeat on the other side. Cook in batches to ensure the pan isn’t overcrowded.

Top the pan de cristal with a generous layer of whipped feta (200 g), followed by the charred courgettes, preserved lemon (1), torn mint (10 g), a drizzle of chilli oil (as needed), pistachios (4 tbsp) and a light drizzle of honey (as needed).
